Easy Summer Farro Salad

Easy is what I’m all about these days. We have all been cooking A LOT, and while extravagance can be fun, we also need to keep it real and just get something on the table fast & without fuss. Extra points if we don’t have to dirty a million dishes while we’re at it! And I love summer cuisine, all light & fresh ingredients, lots of fruit, lots of salad. But wait, I’m still hungry! What I 'love abut this recipe is that it fills me up, but I can still feel cute in my bikini while I’m eating it.

Enter Summer Farro Salad! I love farro. It’s a hearty grain that is a perfect canvas for just about anything. The flavor is slightly nutty and has a taste similar to oats, but the structure of the grain is like a heartier brown rice. It’s filling, yet light, and packed with fiber and all kinds of vitamins & minerals. Each package of farro has it’s own cooking suggestion, but my preferred (fool-proof) way is to just boil it as I would pasta, for 30 minutes, then drain off the liquid. No exact measuring required.

The only cooking required here is boiling the farro. Everything else just goes in the bowl. And I have included cheese in this recipe, but if you’re not into cheese, feel free to just leave it out! And like any/all of my recipes, feel free to add or omit anything! This is meant to inspire you to cater to your desires! Let me know how you like it on Insta @katiewebbernyc!

Easy Summer Farro Salad

  • 1 cup farro*

  • 1/2 cup diced red onion

  • 1 cup corn (fresh, canned or frozen)

  • 1 cup peas (fresh or frozen)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup feta cheese

  • juice of 1/2 a juicy lemon (use the whole thing if you love lemon)

  • 2 Tbsp olive oil

  • 1/2 tsp salt

  • fresh basil, about 1/4-1/2 cup

  • option to add fresh greens like arugula, spinach, or chopped kale

Cook 1 cup dried farro, according to package instructions (I like to always rinse my farro before cooking). Prepare your add-ins, chopping onions & tomatoes and thawing corn & peas if needed (my favorite way to thaw frozen peas/corn quickly is to just rinse under hot water for about 30 seconds). When Farro is done, transfer to a large bowl and add in all the rest of the ingredients. Stir everything together check seasoning. Add salt & pepper to taste.
