Chocolate Coconut Truffles
It's Party Time in NYC...
Is there a more perfect party treat than truffles?! I think not! And these ones look & sound fancy AF, but they could not be easier. I mean, even my husband could make them! There are only four ingredients and they are completely vegan & gluten free. Make these and you're an instant star!
Ingredients
- 1/3 Cup coconut butter or coconut manna (NOT COCONUT OIL)
- 1/2 Cup + 2 Tbsp shredded unsweetened coconut
- 2 Tbsp maple syrup or agave syrup
- 3/4 Cup vegan semi sweet chocolate. (Any of your fave chocolate could work)
*Optional ingredient: A pinch of salt.
Directions
Place chocolate in a microwave safe bowl and microwave for 30 second increments, stirring between until chocolate is melted. It took me a total of one minute. Set aside to cool. *
Chocolate must be cooled before dipping truffles, otherwise the coconut mixture will melt and fall apart.
Place coconut butter into a microwave safe bowl and heat for 10 second intervals, just until it has softened slightly. DO NOT MELT the coconut butter. Once the coconut butter has reached the desired consistency, stir in 2/3 Cup shredded coconut and maple syrup. If the mixture is too loose to form into balls, place in freezer for 2 mins for it to harden a bit. If the mixture is too warm, it won't hold its shape.
Once mixture is pliable, form into 1.5 inch balls, using your hands. Dip each truffle into COOLED melted chocolate until entire ball is covered. Let excess chocolate drop off and place chocolate covered ball on a nonstick surface, such as wax paper. Sprinkle top with remaining coconut while chocolate is still melted. Repeat with remaining truffles. Place in freezer for 10 minutes or until chocolate hardened. Remove from freezer and serve! Makes about 16 truffles.
*A fun variation would be to place an almond inside the coconut ball, to have a crunchy almondy surprise inside! Have fun with these!
