Vegan Kale Caesar
Name a person who doesn’t like a Caesar salad. I’ll wait… Exactly, everyone loves a Caesar!! it’s creamy, lemony, and perfect for when you want greens, but you need to bump it up a notch. Obvi, traditional Caesar is far from vegan, so this is my best vegan attempt (while keeping it simple & accessible).
I’m using kale here, and any time I use kale, I prefer to chop it or shred it. It’s just more pleasurable to eat that way, IMO. Kale not your jam, or you don’t have it on hand? No biggie, use traditional romaine, iceberg, red or green leaf, or any kin of lettuce you fancy.
Traditional Caesar calls for croutons (which are totally acceptable), but here, I topped my salad with my Crispy Chickpeas. So yum! Don’t forget to post your creation on Insta and tag me @katiewebbernyc!
Vegan Kale Caesar
3 cups kale (I like mine chopped or shredded)
1 Tbsp vegan mayonnaise (regular mayo works too)
1 Tbsp olive oil
Juice of 1/2 a juicy lemon (about 2 Tbsp)
1 clove garlic, chopped or minced
1 tsp dijon
1/4 tsp salt
1/8 tsp pepper
Whisk dressing ingredients together and pour over kale. With your hand, massage the dressing into your kale to coat every last bit. *Note: This does not need to be done with any other type of greens, just kale.
