Sweet Potato Apple Stuffing
Stuffing. Is there anything else that even matters? Ok, obvi yes, but like I looooove stuffing! However, since I don’t eat turkey, I’m a little like…ummmm…why am I following a traditional wet stuffing recipe? Why am I left feeling so full and nasty after I stuff myself with stuffing?! Then I created this recipe and my prayers have been answered!
Not only is this a one pot, no bake stuffing, but it is also completely VEGAN, GLUTEN-FREE and GRAIN-FREE! There’s nothing nasty in it, it’s just a bunch of hearty ingredients combined with those perfect classic stuffing seasonings. I’m in love. And so is my toddler! (which means it’s THAT good)
The stars of the stuffing are sweet potatoes and apples, but there are also pecans & cranberries, celery & onions, and so much flavor. And you don’t have to worry about trying to make space in your oven cause it’s all on the stove top! A new kind of stove top stuffing, if you will.

Sweet Potato Apple Stuffing
3 Tbsp olive oil
Cup diced celery (about 4 stalks)
2 Cups diced yellow onion (one large onion)
2 Cups peeled & diced sweet potato (one large sweet potato)
1 3/4 Cup diced apple (I used 1 large honeycrisp apple)
1/2 cup chopped pecans
1/3 cup dried cranberries
2 tsp dried ground sage
1 tsp dried thyme
1/4 tsp cinnamon
1 tsp maple syrup
1 tsp salt (I used Himalayan pink salt)
Directions
In a large skillet over medium/high heat, drizzle olive oil and add celery & onion. Stir until onions and celery have softened about 5 minutes. Add dice sweet potato and stir another 5 minutes. Add sage, thyme, cinnamon and salt and continue stirring until sweet potatoes are beginning to soften. Add apple and stir about 2 minutes. Add cranberries and chopped pecans and remain on heat until all vegetables are fork tender. Stir in maple and salt to taste.
