3 Ingredient Salad With Vegan Ranch Dressing
I love salad. I truly do! I wasn't always like this though. Before eating plant based, I would look at eating salad as a quota to fill or as a chore. It sometimes even felt like a punishment! Now, not only do I crave salad, I have gotten really good at making some bomb-ass salads that taste amazing!
Now, sometimes I love a fully loaded salad with all kinds of goodies to sort through, and sometimes I like to keep it super simple. Occasionally I'll even just have some arugula with oil, vin, salt & pep, which is deliciously perfect, btw. Today, I'm having my fave 3-Ingredient Salad with homemade Vegan Ranch Dressing. You heard me, RANCH!
I love making my own dressings because I know exactly what's in them, and contrary to what I used to think, salad dressing is a whiz to whip up. I always make sure to have some staples in my house, like vegan mayo, lemons, garlic, and plenty of fresh herbs, so that my ingredients are always in arm's reach.
This dressing is so versatile that you could put it on any salad, double (or triple) the recipe for a dip, or drizzle over roasted potatoes. This here salad is only 3 ingredients, and 3 of my faves at that! I could eat the whole thing myself if I were super hungry, or it's great as a dinner salad for 2, to compliment an entree.
Salad Ingredients
1 head Butterhead lettuce
2 Avocados
1/4 cup Pine Nuts
Vegan Ranch Dressing Ingredients
1/3 Cup vegan mayo
1 Tbsp mustard
1 Tbsp unsweetened nondairy milk
Juice of 1/2 lemon
2 Tbsp chopped fresh chives
1 Tbsp chopped fresh dill
1 Tbsp chopped fresh parsley
1 garlic clove, grated
1 tsp onion powder
1/4 tsp salt
1/8 tsp black pepper
