Quick Cauliflower "Fried" Rice

New Year, Same Me! Ok, ok, so I know that the holidays can get cray with the parties and the food and the booze, and the new year is a perfect opportunity to start fresh and give your body that good good that it deserves. I also feel a bit of the post-holiday blues and I’m looking for comfort. I can’t be trying to get healthy on effing raw flavorless cruditè or surviving solely on salad. I need warm food. I need flavor! What I also need (as per usual) is quick and easy. I’m not in the mood to chop and get a million dishes dirty. Im hungry and I WANT IT NOW! I have the perfect dish for you! Quick Cauliflower “Fried” Rice.

I’m calling this “fried” rice because it gives that same comfort of eating your fave take-out fried rice, but it’s sooooo much healthier and you know exactly what’s in it. No unhealthy oils, no insane amounts of sodium, and no sugar (cause that shit is hiding in your take-out folks!). I’m using cauliflower rice here, but you can totally make this with regular rice, or a mix of both (that’s how I like to sneak veggies to my kid, add the cauli to the rice and it’s undetectable!). But if you’re looking for grain/carb free, go with the cauli.

What makes this “Quick” is that I’m using (almost) all frozen or pre-prepared ingredients. This literally cuts the cooking time to less than 10 minutes to make this dish. It’s a perfect go-to lunch or dinner when you aint got time to F around in the kitchen. We’re making moves in 2019 people!!

Make this, eat it, and make it over and over again. Feel great about it! Oh! And this recipe is for a single serving, so use your math skills if you’re making it for more than one person ;)

Quick Cauliflower “Fried” Rice

Ingredients

  • 1 large garlic clove, diced

  • 1 Tbsp coconut oil

  • 2 cups frozen cauliflower rice

  • 1/3 cup frozen edamame (could use peas)

  • 1/3 cup frozen corn

  • heaping 1/2 cup pre-shredded cabbage mix

  • 1 tsp tamari (or liquid aminos, or soy sauce)

Toppings (optional, but they make it sooooo good)

  • fresh cilantro

  • unsalted peanuts

  • lime wedge

  • Sriracha (or jalapeños)

  • green onions

Directions

In a skillet over medium-high heat, add coconut oil and garlic and stir for 30 seconds. Add in cauliflower rice, edamame and corn and stir until no longer frozen, about 3-5 minutes. Add in cabbage and stir another 2 minutes, until cabbage has softened. Stir in tamari, coating everything. That’s it!! Serve with a wedge of lime, fresh cilantro, crushed peanuts, and a dash of hot sauce. Green onions would be great too! *recipe is for a single serving!
