Orange Maple Roasted Carrots

Roasted veggies are just the best! They are the actual definition of “easy” and their flavor never disappoints. Add a foil lined baking sheet for easy cleanup, and BAM, you’ve got a go-to!

Here I have not just any old roasted veggie, but the holy grail of roasting veg, carrots. Carrots do magical things in the oven! They get all soft, sweet, earthy and hearty. Add my basic orange/maple glaze and you’ve got a show stopping side dish, perfect for any occasion.

The carrots I used are a trip-color blend of baby carrots with their tops still on (from Trader Joe’s). You can use any kind of carrots you like, or any kind of vegetable you like! sweet potatoes, squash or other root veggies would be great as well. Just know that the thicker your veggies, the longer they’ll take in the oven…


Orange Maple Roasted Carrots

  • 1 lb carrots (either baby carrots, or large carrots cut into sticks)

  • 2 Tbsp maple syrup

  • 1 Tbsp fresh orange juice

  • 1/2 tsp salt (plus more for seasoning after they come out of the oven)

  • 1/4 tsp pepper

Directions

Preheat oven to 425 and line a baking sheet with tin foil (for easy clean-up). Spray foil or pan with non-stick spray and arrange carrots in a single layer on baking sheet, making sure that they are not touching. Bake for 15 minutes. Remove carrots and pour maple/orange glaze over them, tossing to coat completely. Bake another 15-20 minutes (you may want to check on them & flip them around mid-way) or until your carrots are golden and tender. Season with a touch of good quality salt and serve!
