No-Cook Summer Couscous Salad
It’s HOT. Too hot. Sometimes turning on the oven is just not an option, so here is a perfect no-cook, super refreshing dish. And yeah, you heard me, NO-COOK. You just put all the ingredients in a bowl and bam, there she is!
This dish is perfect as a main dish or as a side. The flavors are bright and refreshing, ideal for Summer! What I love about couscous is how incredibly light it is. It’s filling without weighing you down, which is always the goal. And the longer it sits, the better! Hooray for leftovers!!
Another awesome thing here is that you can customize this to your favorite flavors. For example, this recipe calls for mint, but feel free to use basil if you fancy! Or swap the golden raisins for diced dried apricots! Go nuts!

What You’ll Need… (Serves 2, leftovers are awesome!)
1 cup plain dry couscous
3/4 cup lemon juice
3 Tbsp olive oil
10-15 mint leaves, chopped (basil could work!)
1 green bell pepper, chopped (can use any color pepper you like)
2 tomatoes, chopped
1/2 a small red onion, chopped
1/2 cup golden raisins (chopped dried apricots would be great too!)
plenty of salt & pepper to taste
What You’ll Do…
In a large bowl, combine the couscous, lemon and olive oil. Fluff the couscous with a fork. Set that aside and chop all your ingredients. Add one ingredient at a time, fluffing with a fork every time. Season with salt and pepper, and add a touch more lemon or olive oil if it feels dry at all. This can be served right away, or you can make ahead, as it gets better the longer it sits. Before serving, I like to garnish mine with a few small tomatoes and some extra herbs over the top! Enjoy!
