Guacamole and Pico De Gallo!
Guac. It’s a necessity. With chips, with veggies, on a taco, on a burrito, on a salad…on ANYTHING. It’s imperative that you can whip up some guac and I’m here to help!
Now. I understand that there are a few particulars that some people may or may not be partial to, so I’m gonna give my basic recipe and feel free to zhuzh it up! There are a few non-negotiables though, which are avocado (duh), lime, garlic, and salt. That will give you a very basic guac feel, but won’t be too out there for super picky eaters and/or kids. In my personal opinion, cilantro is a must, but I get that there are loads of folks who can’t stand the stuff. I don’t get those people, but fine, I aim to please. My recipe also includes tomatoes, and jalapeños & red onion are two of the take-it-or-leave-it ingredients.
Here is my recipe for 2 servings (although, I could easily polish it off all on my own)…
2 ripe avocados (as soft as they get, without being rotten)
1/2 juice of a juicy lime (keep the other half on hand, just incase)
1 or 2 cloves chopped or minced fresh garlic (for kids, start with only 1 clove)
1/4-1/2 tsp salt (start with 1/4 tsp, taste and add a bit more to get it just right)
1 heaping tbsp chopped fresh cilantro
1/3 cup diced tomatoes (any tomato you have on hand)
1/4 cup diced red onion
1 small jalapeño, diced, seeds & rib removed
Stir it/mash it all together to make it as smooth or as chunky as you like. Bam, you did it!!
*Side note. All of these ingredients, without avocado, make a perfect Pico De Gallo salsa!
