Chilled Green Beans w Orange Shallot Vinaigrette and Walnuts
Even though these are a perfect addition to a holiday table, I actually make these for lunch or dinner on regular rotation. There’s just something about the chilled, slightly crisp green bean, soaking in semi-sweet orange vinaigrette with the subtle spice from the shallots. And that walnut crunch just takes us to another level. So simple, straightforward, and satisfying!
I blanch the green beans, which means I boil them for 2 minutes, then put them straight into ice water. It makes for the bright green gorgeous color, and the perfect crispness-to-tenderness ratio. Love these and can’t wait for you to add them to your repertoire!
What You’ll Need…
1/2 lb green beans
1/2 of a shallot, sliced thin
Juice & zest of 1/2 an orange
2 Tbsp cup olive oil
1 tsp dijon
Salt & pepper to taste
1/4 cup walnuts, chopped
What You’ll Do…
Bring a large pot of water to a boil and have a large bowl with ice water set aside on the counter. Drop green beans in the boiling water and boil for 2 minutes. Drain, then transfer beans to the ice water and let chill for at least 10 minutes. This can be done ahead of time, just store the green beans in an airtight container in the fridge, for up to 24 hours. Meanwhile create dressing by whisking together rest of ingredients, except walnuts. Pour dressing over green beans and top with chopped walnuts. Enjoy!
