Brothy Coconut-Ginger-Turmeric Noodles

For an oh-so comforting homemade meal that’s healthy and crazy delicious, you came to the right place! More than just noodles, but not quite a soup, these noodles soak up most of the yummy broth and make for a mouthful of flavor that prompts bite after bite. With broth that becomes rich with caramelized onions, garlic, and mushrooms, and lightly spiced with ginger & turmeric. Then stirred with creamy coconut milk and a few other flavor bombs that make this dish pop! I’m in love.

This dish is completely vegan, and easily kept gluten-free by using tamari and your favorite gluten-free noodles (I suggest rice noodles).

And please don’t feel discouraged with a slightly long ingredients list. This dish is very simple and straightforward to make, and worth every single ingredient, I promise!


What You’ll Need…

  • 1 Tbsp olive oil

  • 1 yellow onion, sliced into half moons

  • 3 cloves garlic, chopped

  • A 2-inch section of ginger, grated or finely chopped

  • 2 carrots, peeled and sliced into matchsticks

  • 8 oz mushrooms of choice, sliced (I used cremini)

  • 1 tsp turmeric

  • 5 cups water

  • 4 oz noodles of choice (I used Somen noodles)

  • 1/2 cup canned coconut milk

  • 1 Tbsp tamari or soy sauce

  • 1 tsp sriracha (or your fave hot sauce)

  • Juice of 1/2 lime

  • Plenty of salt & pepper (at lease 1/2 tsp salt & 1/4 tsp pepper)

  • Toppings - fresh cilantro, scallions, and extra lime

What You’ll Do…

In a large pot over medium heat, add oil, onions, garlic, and ginger. Sauté until onions are caramelizing, about 10 minutes. If pan gets too dry, add 1/2 cup of water to deglaze the pan. Add carrots, mushrooms, and turmeric, and sauté 2-3 minutes, until veggies are softening slightly. Season with salt & pepper. Add 5 cups of water, bring to a boil, then reduce heat to a medium/low and let simmer at least 20 minutes. When you’re ready to add your noodles, bring back up to a boil and add noodles, cooking for as long as package instructions suggest. Then, stir in coconut milk, tamari, lime, and hot sauce. Serve with suggested toppings and Enjoy!!
