6-Minute Beans

I cannot get enough of these beans! Seriously, it’s one of those dishes that I just want to make every day. Maybe it’s because it’s so quick to make (about 6 minutes!!), maybe because they taste so damn good, idk. I love this recipe, because like many of my recipes, it’s forgiving and can be manipulated however you like or for whatever you have on hand. Don’t have white beans, use chickpeas! Don’t have fresh basil, use thyme! Don’t have cherry tomatoes, use regular tomatoes or skip them all together! This bean dish can be whatever your heart desires. Oh, and did you know beans are good for your heart?!

Without further ado… 6 Minute Beans

  • 1 can rinsed & drained great norther beans (or cannellini beans or chickpeas)

  • 2 Tbsp olive oil

  • 2 cloves garlic, slice/chopped/minced, whatever you like

  • Pinch of red pepper flakes

  • About 5 cherry tomatoes, sliced

  • Fresh herbs like basil or thyme

  • Lemon to squeeze on top

  • Salt to taste

In a sauté pan, over medium heat, add olive oil & garlic and sauté for 2 minutes. Add a pinch of red pepper flakes and sliced tomatoes, sauté another 2 mins, until tomatoes have softened a bit. Add rinsed & drained beans, add a pinch of salt and sauté another 2. Remove from heat and add fresh herbs and a squeeze of lemon. Serve and top with a drizzle of olive oil and an extra pinch of salt. *Note - These beans are an excellent canvas for adding greens! Stir in chopped kale, spinach or arugula about 2 minutes before adding the beans, if you want to greenify!
