Best Vegan Banana Muffins
Thomas loves banana bread. Like, looooves it. But let me be real here, I have tried a few different recipes (before I was vegan), and he wasn't in love with most of them. Either too dry or too bland, or completely fell apart when he tried to cut it. You get it, I didn't have my banana bread mojo. Well, that's just not gonna cut it because I need to keep my man happy! So I said f*%k it and I made my own vegan (& refined sugar free!) recipe, and....Thomas loooooved it!
I'm calling these banana muffins, but Ive also made it as a cake! And if you are wanting to bake it in a loaf pan, it'll just need some more time in the oven, no sweat. But holy moly, they’re super flavorful and soooo moist & delicious. The baby was also in love with them, and ya know what, I didn't feel bad about giving them to her because it's refined sugar free!
So check it out, when I was creating this recipe I wanted to see if I could steer clear of plain old white sugar. I had some coconut sugar and I thought, "hmmmm, I wonder what would happen if I swapped reg sugar for this?...", so I did! The result? Bananas! And I sprinkled a little extra on top of the bread/cake to make a sticky toffee top layer. Hello YUM! And listen, if you don't have coconut sugar, regular sugar works great too!
Banana bread is also the perfect place to use flax as an egg replacement. You just use three Tablespoons of warm water for every one Tablespoon of ground flax to substitute for one egg. I wanted two "eggs" for this recipe, so that meant 2 Tbsp flax/6 Tbsp water. You let it sit for about 5 mins, and voila! The flax soaks up the water and it becomes a thick slimy mix, that totally replicates an egg. I also love that I'm adding a superfood into my sweet treat! Flax contains omega-3s, fiber, and something called lignans that help balance hormones. Hell yes!
AND! If you're gluten free, this recipe swaps perfectly. I've tried it with Bobs Red Mill Gluten Free Baking Flour, and it was just perfect!

Banana Muffin Obsession
Vegan Banana Bread
1/2 Cup melted vegan butter or coconut oil
1 Cup coconut sugar (or regular sugar)
2 flax eggs (2 tbsp ground flax + 6 tbsp warm water)
1 tsp vanilla
2 large mashed ripe bananas (or 2 1/2 medium bananas)
1 Tbsp non dairy milk (I used oat milk)
1 1/2 cup flour
3 tsp baking powder
1 tsp salt
1 tsp cinnamon
*Optional! 1/2 Cup mini chocolate chips!
**TIP! If your bananas aren't super ripe, add 2 tsp of honey (or maple syrup) to them!
Preheat oven to 350 and lightly grease (I used coconut oil spray) an 8 inch cake pan or loaf pan. In a small bowl or cup, combine ground flax & warm water, stir and set aside at least 5 mins for flax to absorb water. Mash ripe bananas, set aside. Combine butter & sugar. Once combined, add flax egg, vanilla, mashed bananas and continue mixing. Combine dry ingredients in a separate bowl and whisk with a fork to remove any lumps. Slowly combine dry ingredients with wet, until just combined. Do not over mix. If using chocolate chips, add now:) Place batter into pan and sprinkle a bit of sugar on top, if desired. Bake at 350 for 30-35 mins or until center is no longer runny. If you're using a loaf pan, baking time make take up to and hour.
I recently made version of this recipe, using a gluten free baking flour blend. It turned out amazing! I also added mini vegan chocolate chips and baked in muffin tins for 18-20 mins. Sooooo good!
